The proceeds of the sale of this book goes towards supporting 50 of Mosab’s family members in Gaza.
باهظة في أوائل عام ۲۰۲۳ . كان والده يمتلك مزرعة زيتون تبعد ۲۰ دقيقة عن منزلهم. كانت العائلة كلها تجتمع لتناول الطعام ثلاث مرات في اليوم، جالسين حول طاولة خشبية منخفضة على فرشات ثابتة على الأرض. وعندما يبدأون في تناول الطعام، كانت والدة مصعب، مريم، تشجعهم دائما على تناول الطعام في صمت كي يستمتعوا بالنكهة، كانت تقول: “فقط كلوا واستمتعوا”.
أما الحلوى، فكان والده يقطع البطيخ ويوزعه على كل فرد عندها، يُرفع الصمت، ويبدأ الحديث حول أحوال المزرعة، وما يحتاج إلى إزالة الأعشاب، وما إذا تم إطعام الدجاج والماعز، والخراف والأرانب يضحكون ويمزحون حول من قام بإزالة الأعشاب في ذلك الأسبوع.
ومن المؤلم أن مزرعة الزيتون قد دمرت الآن يسعى هذا الكتيب لتوثيق بعض النكهات والأطباق من وطنه، في وقت صعب يسوده الجوع والمعاناة جميع الوصفات تم إملاؤها عبر الهاتف من خان يونس جنوب غزة، ما لم يذكر خلاف ذلك.

Mosab Alarja is from Rafah, Palestine and was forced to leave and smuggled out at great cost in early 2023. His father owned an olive farm 20 mins from their house. The whole family would eat together three times a day, sitting at a low wooden table on firm mattresses on the floor. When they started to eat Mosab’s mother, Mariam would always encourage them to eat in silence so they could enjoy the food. ‘Just eat and enjoy’ she would say. For desert his father would slice up a watermelon and hand it out to each person. The silence was lifted, and they would exchange chat about how the farm was going, what needed weeding whether the chickens had been fed, the goats, sheep and rabbits. Laughing and joking about who had done the weeding that week.
Heartbreakingly, the olive farm is now destroyed. This booklet seeks to capture some of the flavours and dishes from his homeland, in a time of great difficulty and hunger. All recipes have been dictated over the phone from Khan Younis, Southern Gaza unless otherwise stated. We hope you enjoy!
